Paleo Pumpkin Bread French Toast

I find that as I grow older, my taste buds evolve and I find myself enjoying foods I used to not care for. Pumpkin and squash are now two foods that I love even though I absolutely hated them when I was a child. I still remember my third grade teacher making us carving pumpkins and I refused because I couldn’t get past the smell or the slimy insides. Twenty something years later and I love all things pumpkin! I enjoy it most in desserts and baked goods just like this pumpkin bread french toast. Enjoy the bread as is or turn it into a satisfying breakfast!

Pumpkin bread
  1. 1 tbsp coconut oil
  2. 1 cup pumpkin seeds
  3. 6 dried figs, chopped
  4. 1/3 cup pumpkin puree
  5. 3 eggs
  6. 2 tbsp coconut flour
  7. 2 tbsp coconut oil, melted
  8. 3 tbsp raw honey
  9. 1 tsp vanilla extract
  10. 1 tbsp cinnamon
  11. 1/2 tsp nutmeg
  12. 1/4 tsp baking soda
  13. 1/4 tsp baking powder
  14. 1/4 tsp salt
French toast
  1. 4 eggs, whisked
  2. 1/4 cup coconut milk
  3. 1 tsp vanilla extract
  4. 1 tsp cinnamon
  5. pinch of sea salt
  6. 2 tbsp coconut oil

**Helpful tips and common mistakes

The one great fact I love about making gluten-free breads that are Paleo is that most of the time it’s just a matter of mixing the ingredients together and baking. This pumpkin bread is no different. 

By roasting pumpkin seeds and pureeing them until fine you are making pumpkin seed flour! This process is very much the same for making almond flour. I imagine that you can prepare this pumpkin bread with almond flour instead of the pumpkin seeds. I made one batch with quinoa flour and although the batter was a bit thicker, the end result was the same.

When preparing the french toast, I like to let my bread soak in the egg and milk mixture for at least 30 seconds, but no longer than 1 minute. Drizzle with maple syrup and you have one hearty breakfast! The pumpkin bread is not too sweet and has a hint of cinnamon which nicely complemented the pumpkin. It’s moist and light, although it may look dense and very filling. This recipe just shows that you can turn almost any bread into french toast – next up, banana bread french toast!
