As promised, I have the second appetizer for the week. Introducing, manchego tortas with chorizo, topped with romesco sauce. These hors d’oeuvres are incredibly addicting with the complex flavors that blend together to create one harmonious bite. Tortas refer to a round flat type of bread that is prepared without yeast. Top the tortas with melted manchego cheese, thinly sliced chorizo and homemade romesco and you have a wonderful appetizer that is surprisingly easy to prepare. Perfect for the holidays, a fancy dinner, or even a football gathering!
- 1/2 cup sliced almonds, toasted
- 2 tablespoons sherry vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 1 tablespoon chipotle chile, canned in adobo sauce
- 4 ounces (about 2 large) bottled roasted red bell peppers, drained
- 1 garlic clove
- 1/2 cup extra-virgin olive oil
- 3 whole-wheat sandwich rounds
- 2 ounces Manchego cheese, shaved
- 4 ounces Spanish chorizo, cut into 32 (1/16-inch) slices
- 1/3 cup flat-leaf parsley leaves

**Helpful tips and common mistakes
People eat with their eyes so it’s always important to have colorful delicious looking food when serving your guests. Luckily for you, these tortas are easy to put together while still appearing as if they look all day.
As you can see, the recipe calls for sandwich rounds which aren’t exactly tortas. If you desire, you can make your own tortas at home or try to find them at a market. In my case, I was unable to locate the bread so I purchased regular whole wheat sandwich bread. To make the perfectly sized rounds, use a 1 inch biscuit cutter.
The manchego cheese can be substituted with another type of cheese, including but not limited to parmesan, asiago, brie, cheddar, or even pepperjack. I chose parmesan for my appetizers.
The romesco sauce can be prepared up to 3 days ahead and tastes even better after one day since the flavors meld together. As for the chorizo, make sure to purchase cured and smoked sausage rather than the fresh chorizo. Fresh chorizo must be cooked before consuming while the smoked Spanish chorizo can be eaten out of the package.
Broil the bread with the cheese and start stacking your ingredients! You can prepare these ahead of time since they can be served at room temperature. I knew these manchego tortas would be delicious but I was still surprised at just how delicious they were! Romesco sauce is one of my favorites; paired with smoky, spicy chorizo with a crispy bread and salty cheese…perfection. Make sure to prepare extras because your guests will be eating these right up!
