As soon as watermelon season starts, countless recipes for watermelon tomato salads start popping up. Most of them are paired with fresh herbs, cheese of some sort (usually goat cheese or feta) and basil or balsamic vinaigrette. I wanted to stray away from the norm and dress it up a little differently by pairing this popular salad with a zesty coconut lime dressing. With a slightly Asian influence, this watermelon tomato salad is different but in a good way. Oh, and did I mention? It can be thrown together in 15 minutes or less. Jackpot!

This watermelon tomato salad is without a doubt one of the easiest recipes. There is no cooking required, just some chopping and stirring. I did say this recipe was perfect for the summer right? That also applies to the preparation. I am a strong believer in spending as few hours in a hot kitchen as possible. You can even make the coconut lime dressing and chop the watermelon and tomatoes the day before. The next day just toss everything together with the fresh herbs and pistachios and it’s ready to be served. The coconut lime dressing is very light with just a hint of zest and sweetness to balance the flavors. The idea is to lightly dress the watermelon and tomatoes to make them a little brighter; we don’t want to overshadow the key players with complex flavors.
