Cook pasta according to directions on package. Drain.
Whisk together eggs and parmesan.
Heat 1 tablespoon oil in large saute pan over medium heat. Add garlic and saute 30 seconds. Add cooked noodles and egg mixture and stir the mixture until the eggs are softly set, about 3-4 minutes. Season with salt and pepper and add the chopped parsley. Drizzle extra virgin olive oil on top and serve.
