Curry Spiced Roasted Chicken with Apple Miso Sauce

Ingredients

Curry spiced roasted chicken

  • 4 each chicken thighs, bone-in, skin on about 2 pounds
  • 3 tablespoons olive oil
  • 4 garlic cloves finely minced
  • 1 ½ teaspoons curry powder
  • 1 ½ teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cardamom

Apple miso sauce

  • ½ cup apple cider
  • 5 tablespoons brown sugar
  • 3 tablespoons white miso
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons butter
  • 4 shallots thinly sliced
  • 1 large Honeycrisp apple sliced ¼-inch thick
  • 1 tablespoon chopped cilantro for garnish

Instructions

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or foil.
  • Season chicken. Combine olive oil with garlic, curry powder, salt, cumin, coriander, paprika, black pepper, cinnamon, and cardamom. Pour seasoning over chicken, coating chicken on all sides. Place chicken on prepared baking sheet and roast for 30-40 minutes or until the internal temperature registers 165 degrees F.
  • Meanwhile, make apple miso sauce. In a medium bowl whisk together apple cider, brown sugar, white miso, and apple cider vinegar until well combined.
  • Melt butter in a large saute pan over medium heat. Add shallots and cook until softened, about 5 minutes. Add apple slices and cook until softened, about 3-4 minutes, stirring occasionally. Pour apple cider mixture and bring to a boil. Reduce heat to low and simmer until sauce is slighlty thickened, about 3-4 minutes. Remove from heat and keep warm.
  • Remove chicken from oven and transfer to a serving platter. Spoon apple miso sauce on top and garnish with chopped cilantro if desired. Serve immediately.

Notes

You can marinate the chicken overnight.
The apple miso sauce can be prepared the day before.
Use any other tart apple such as Granny smith apples.
