Eggnog Waffles with Spiced Apples

Ingredients

Spiced apples

  • 2 tablespoon butter
  • 2 cups apples peeled, cored, chopped into small bite-size chunks
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon

Cinnamon butter

  • ½ cup butter softened
  • ¼ cup powdered sugar
  • 1 teaspoon cinnamon
  • pinch of salt

Eggnog waffles

  • 2 large eggs separated
  • 2 cups eggnog
  • 2 teaspoon vanilla
  • 2 tablespoon maple syrup
  • cup vegetable oil
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ cup cornstarch

Instructions

  • Make the spiced apples. Melt 2 tablespoon butter in a saute pan over medium-low heat. Add 2 cups chopped apples, ¼ cup brown sugar, and ½ teaspoon cinnamon and cook until the apples are softened, about 10 minutes.
  • Prepare the cinnamon butter. Whip together ½ cup softened butter with ¼ cup powdered sugar, 1 teaspoon cinnamon, and a pinch of salt until light and fluffy. Set aside.
  • Make the eggnog waffle batter. Separate the egg yolks from the egg whites. Whip the egg whites until stiff peaks form.
  • Mix together the 2 egg yolks with 2 cups eggnog, 2 teaspoon vanilla, 2 tablespoon maple syrup, and ⅓ cup vegetable oil.
  • Add 1 ½ cups flour, 1 ½ teaspoon baking powder, ¼ teaspoon baking soda, ½ teaspoon salt, 1 teaspoon cinnamon, and ¼ cup cornstarch to the wet ingredients, stirring until combined. Carefully fold in the egg whites just until combined. Let the batter rest for 10 minutes.
  • Preheat the waffle maker and cook waffles according to waffle maker instructions.
  • Serve waffles with cinnamon butter and spiced apples.
