Make the spiced apples. Melt 2 tablespoon butter in a saute pan over medium-low heat. Add 2 cups chopped apples, ¼ cup brown sugar, and ½ teaspoon cinnamon and cook until the apples are softened, about 10 minutes.
Prepare the cinnamon butter. Whip together ½ cup softened butter with ¼ cup powdered sugar, 1 teaspoon cinnamon, and a pinch of salt until light and fluffy. Set aside.
Make the eggnog waffle batter. Separate the egg yolks from the egg whites. Whip the egg whites until stiff peaks form.
Mix together the 2 egg yolks with 2 cups eggnog, 2 teaspoon vanilla, 2 tablespoon maple syrup, and ⅓ cup vegetable oil.
Add 1 ½ cups flour, 1 ½ teaspoon baking powder, ¼ teaspoon baking soda, ½ teaspoon salt, 1 teaspoon cinnamon, and ¼ cup cornstarch to the wet ingredients, stirring until combined. Carefully fold in the egg whites just until combined. Let the batter rest for 10 minutes.
Preheat the waffle maker and cook waffles according to waffle maker instructions.
Serve waffles with cinnamon butter and spiced apples.
