Indian Spiced Sweet Potato Patties

Ingredients

  • 1 pound sweet potato peeled and cut into chunks
  • 1 tablespoon minced jalapeno
  • ¼ cup chopped cilantro
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 ½ teaspoons ground coriander
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon curry powder
  • ½ teaspoon cinnamon
  • 1 egg
  • ½ cup panko
  • 2 tablespoons all-purpose flour
  • 2 tablespoons oil

Instructions

  • Peel and cut sweet potatoes into medium-size chunks. Place in a medium pot and fill with enough water to cover. Cover the pot and bring to a boil over high heat. Reduce heat to medium and continue to cook until a fork can easily pierce through potatoes, about 15 minutes.
  • Drain sweet potatoes and mash until smooth. Let cool slightly. Add jalapeno, cilantro, smoked paprika, cumin, coriander, salt, black pepper, curry powder, cinnamon, egg, panko, and all-purpose flour. Mix until well combined.
  • Heat 1 tablespoon oil in a saute pan over medium heat. Scoop ¼ cup of sweet potato mixture into pan, flattening it to make a patty. Repeat with remaining sweet potato. Cook until golden brown, about 3-4 minutes. Flip patties, adding more oil if the pan becomes dry. Cook until golden brown and remove patties from heat.
  • Repeat with remaining sweet potato mix. Serve warm.
